Cod with Tomato

Directions

  1. Preheat oven to 350F/180°C
  2. Lightly season cod with sea salt
  3. Using a cast iron pan on medium heat with oil, place cod presentation side down
  4. Cook in pan for 1 minute then put in oven (don’t move the cod in the pan)
  5. Cook in oven for 3 minutes then put butter and thyme and cook 2 more minutes
  6. Remove pan from oven, then tilt so the butter pools on one side, baste the butter over the cod, then turn the cod over and baste again, then remove from pan
  7. Cooking time may vary depending on size of fish

Tomato sauce

  1. In a small sized pot on medium heat, add olive oil, onion, garlic and then cook for 2 minutes
  2. Add diced tomato and cook for 3 minutes
  3. Add sea salt and pepper
  4. Blend mixture

Vegetables

  1. In a pan on medium heat, cook all vegetables with olive oil
  2. Season with sea salt and then add to stewed tomato sauce

Assembly

  1. Place tomato and veg on base of plate and then place cod on top
