Halibut

Directions

Red Pepper Butter

  1. Roast red peppers and garlic cloves
  2. Blend all ingredients in food processor until smooth
  3. Place on parchment paper and form into a log
  4. Place in fridge until needed

Vegetables

  1. In a pan on medium heat, roast halved pearl onions and asparagus with butter until 3/4 cooked
  2. Remove from pan and wait for fish to be cooked

Halibut

  1. Preheat oven to 350F/180°C
  2. In a cast iron pan on medium heat, season halibut with sea salt
  3. Let the oil get hot then place halibut presentation side down in pan
  4. Sear for 2 minutes then place in oven for 3 minutes and then add butter
  5. Let cook for 1 minute
  6. Remove from oven
  7. Turn fish over
  8. Baste the butter in pan over top of halibut
  9. Remove from pan
  10. Place cooked vegetables in pan and place halibut on top, then place a slice of the red pepper butter on top
  11. Broil in oven for 1 minute
