Merluccius bilinearis
Silver Hake is a long, thin species and is named for the silvery iridescence on its skin. This fish, with its sweet flavour and delicate, tender texture has a high degree of culinary versatility.
Silver hake has a protruding lower jaw and it is covered with large scales, their body is silver-grey on its sides, becoming darker on their dorsal region and lighter on their underside. This flavorful silvery fish is a true Canadian seafood treasure.
