Yellowtail Flounder

Yellowtail flounder is truly a Canadian species. Known as sole in some markets, it is a favourite because of its sweet, mild taste and delicate, flaky texture.
It is also increasingly known as a recipe replacement for Plaice. The name “yellowtail” comes from the distinctly yellowish colour of its fins, including the tail fin. The fish’s upper side is reddish brown with irregular “rusty” spots. This fish is a true Canadian seafood treasure.
